Easiest Sugar Cookies Ever!

Thank you Carol of Justletmequilt for this wonderful annual blog hop called Virtual Christmas Cookie Exchange. What a great tradition you’ve carved out for us all. It always makes me excited to see what everyone bakes. I’ve gathered a few good recipes over the years and this time, I wasn’t sure what to showcase on my own blog.

This year I found an intriguing recipe online that I wanted to share with you all. Scrolling on the web, I saw a baking site called bellyfull.net with a recipe for sugar cookies that only requires 3 ingredients!! I was in disbelief that there were no eggs, no baking soda, no baking powder or anything typical. I just had to give this a try to share with you gals, so here’s me getting started on early Chanukah. I used up my blue nonpareils for a good cause. After baking two batches, I can tell you that the cookies are very light, crispy and sugary. They couldn’t have been easier!! They’re going in my freezer for our Chanukah family dinner next week. One thing to check off the list! Next time you have no eggs in the house but really want to make cookies…remember this recipe find.

Three Ingredient Sugar Cookies – (found at bellyfull.net) Recipe makes 35 cookies

Make the dough: Preheat the oven to 325 degrees. Beat together 1 cup of room temperature butter, 2/3 cup sugar, and 2 cups plus 1 Tablespoon flour and 1 teaspoon vanilla extract until blended.

Form the cookies: Prepare a cookie sheet lined with parchment paper. Form the above dough into 1-inch balls and roll them into a small dish with 3 additional Tablespoons of sugar. Place the sugared dough balls on the cookie sheet 2 inches apart, and flatten them with a glass. Finally, add sprinkles or nonpareils if you wish. (I added the blue nonpareils while they were still ball-shaped, but any method will work.)

Bake: Bake the cookies at 325 degrees for 15 minutes or so, until just barely golden around the edges and bottom.

That’s it. These are not cookies that you will use with cookie cutters, but have no fear, they’re as easy as described! You don’t have to fuss, put the dough in the fridge or anything like that!! This one is also easy enough to make with the grandkids on a rainy day.

As for my project, well they didn’t get photographed in time. So sorry. I’m making scrappy, crumb-style zippered bags for some holiday gifts. They look like these here, but with zippers. I have a purple one for the ladies at the local public library. They help so much with my book club. They get large-print books for my senior residents and my colleague and I plan to stick a gift card in the bag for each of them. One bag is from purple scraps and another one is mostly blacks with blues. I hope to make several more as well. I also have a yoda bag planned for a work friend and a black tote for another friend who uses my tote as her main purse. I told her it needs a zipper next time, and I plan to surprise her with a new bag. I’ll photograph all the bags when I can, but you get the idea.

  1. I will keep this recipe in mind, as you say, when I have no eggs around. I made sugar cookies around Thanksgiving time. Mine were the cookie cutter recipe though, I just love them. These bags look wonderful to use as gifts.

    • Thanks so much. I really love the cookie cutter cookies. I made salt dough ornaments with my senior residents this year. We painted them and strung velvet ribbons to hang them on the trees. They look incredible. Sadly, some of our Alzheimer’s residents thought they were real cookies and took a bite or two. No harm done but sugar cookies would have been much better!!

    • I know, right?? Only 3 ingredients and they’re easy, delicious and freeze well too. Yes, the bags are a no brainer for librarians.

    • Thank you so much. These are really so easy that you can’t go wrong. I thought they wouldn’t work but it was just as advertised. I’m so excited to get back to making those bags. I had made about 6 of them and we sold them at work for an Alzheimer’s fundraiser. I got 35$ for each of them!! I never sell my stuff but for a fundraiser I was willing to go along. I’m getting requests for more but first the gift giving takes precedence.
